Oil and railroad booms were taking place near Casmalia at that time, and the workers frequently stayed at the hotel. Mrs. Veglia was a great Italian cook and she would prepare homestyle meals which she served family-style. In 1933 the liquor prohibition was repealed and the Veglia's received a liquor license for the bar. Ed Vail's guests and guests at the Marshallia Dude Ranch frequented the hotel as did Camp Cooke employees. For recreation and entertainment there were pool tables, player pianos, a card table, and a wood stove where everyone could gather and share stories. On many occasions the pool tables were pushed aside for dancing. Paul Veglia passed away in 1932 and for the next nine years Mrs. Veglia continued to run the business. In 1942 she rented it out to Kit Carson (not the Kit Carson) who intended to open a barber shop and a room for gambling (which was illegal). When the county learned of his plans, a permit was not issued for both. His barber shop business only lasted about four months. When Mrs. Veglia passed away in 1944, her son Mario was left to run the restaurant and he decided to change it into a steakhouse. He changed the name and "The Hitching Post" was born. The Hitching Post was the first oakwood Bar-B-Que restaurant in the area. Mario went into partnership with Mr. Boyd "Boydy" Wyse and the two of them tore down the hotel rooms in back and renovated the restaurant. (Wyse had leased the Casmalia Ranch during WWII.) In 1946 a third partner, Julio Zaragoza, joined the team. (Julio leased the Casmalia Ranch after Boyd.) Mario Veglia became a silent partner, Boyd was the main partner, and Boyd and Julio did the majority of work, taking turns at the pit and managing the restaurant. In 1952 the business was bought in full by brothers Frank and Victor Ostini and their nephew, Jerry Ransom. Two years later the brothers bought out Jerry. Frank did all the cooking behind the pit while Vic bartended and worked in the kitchen. They did some rebuilding - increasing the size of the bar-b-que pit and adding an extra dining room, some storage rooms, and a meat-cutting room. In 1957 Julio Zaragoza bought Vic's share of the business, and Frank and Julio then took turns behind the pit cooking. There were no menus in 1957 and only one dinner was available - an eighteen-ounce steak (chef's choice of top sirloin, New York, filet mignon, or T-bone), French fries, shrimp cocktail or tomato juice, tossed green salad, beverage, and ice cream for dessert. The complete meal cost $3.75!

The story goes that in the 1950s a Safeway butcher named Bob Schutz was overstocked on ground beef and stew meat, so he took a curved muscle from the bottom sirloin usually destined for chopping or grinding, and put it on his store's rotisserie. He and his staff were shocked at how flavorful and tender it was. He called it tri-tip and started promoting it as a barbecue meat. Nowadays, when you say barbecue in this beautiful slice of Californiana, with beaches and mountains, you are talking tri-tip, not ribs or brisket. Tri-tip is a crescent shaped muscle from the bottom sirloin just in front of the hip. A typical tri-tip might be about 8" long, 3" wide in the center, and 3" thick in the center, tapering at the ends, and weighing 1.5 to 2 pounds. It is available in every grocery of butcher shop in Southern California, but it is hard to find elsewhere. If you don't live on the left bank, your butcher should be able to special order it. Tell her it is the tensor fasciae latae muscle from the bottom sirloin, and it is number 185C in the NAMP book, the butcher's bible. It has big beefy flavor, it is very lean, so it can be on the chewy side if you don't cook and slice it properly. But cook and slice it the way they do in Santa Maria, and you can have a piece almost as tender, and every bit as juicy as prime rib. I call it the Poor Man's Prime Rib.

Il y a trois entrées vers la plage avec trois bars et un grill. Bcp de drink alcoolisé et non alcoolisé, c'est malade! La plage est tellement grande qu’on peut être près des terrains de volley-ball avec la musique autant qu’on peut être éloigné avec aucun voisin. Personnel: Trop gentil pour vrai, l'animation aussi est malade avec beaucoup de concours, des spectacles le soir. Le personnel parle assez anglais et sont très courtois. Ils nous reconnaissent et sont très serviables. Activité/Excursion: J’en ai pas fait mais y'en a beaucoup mais c'est cher (dans les 130$ canadien et plus). Y'a catamaran avec dauphin, safari terre et mer, etc. mais, on a beaucoup d'activité inclus comme mini catamaran, snorkelling, pédalo et tout alors c'est bien! On peut louer l’équipement nécessaire gratuitement. Nourriture: Je peux pas comparer car c'était ma première fois à Cuba, mais pour ma part j'ai adoré les resto à la carte et le buffet il y a de tous les goûts pour toutes les nationalités, le point fort c'est surtout au fond du buffet, il y a des chefs avec des stations de fruits de mer, pates, pizza etc. et ils te les font sur place! History: Santa Maria Style Barbecue originated in the mid-19th century when local ranchers would host Spanish-style feasts each spring for their vaqueroes. Then, as today, the meat was rolled in a mixture of salt, pepper and garlic salt before being barbecued over the red oak coals, which contribute a smoky, hearty flavor. In the 1950s, a local butcher named Bob Schutz perfected the tri-tip, a triangular bottom sirloin cut that quickly joined top-block sirloin as a staple of Santa Maria Style Barbecue. President Ronald Reagan was an avid fan of Santa Maria Style Barbecue. Local barbecue chef Bob Herdman and his "Los Compadres Barbecue Crew" staged several barbecues for President Reagan, including five feasts on the South Lawn of the White House. Pinquito beans Pinquito beans are an essential component of the traditional Santa Maria Style Barbecue menu. Pinquito beans are a cross between a pink bean and a small white bean. How they came to be grown in the Santa Maria Valley remains a mystery.[citation needed] Some[who?] say the beans were given as a gift by a Mexican vaquero to one of the early Swiss-Italian settlers. Others[who?] contend that a lady brought several plants with her when she migrated to the area from Europe. Pinquito beans grow well in the fertile soil and mild climate of the Santa Maria Valley, which is the only place where pinquito beans are grown commercially.
